This was a "mistake" my sister-in-law made. It is now a family favorite. You can use cheese or mushroom soups in place of the chicken soup. In the original recipe it called for Rotel tomatoes instead of enchilada sauce. -- posted by Kerena

This is the type of recipe that suits a college student or inexperienced cook. I developed it for my son who studies at Purdue. Rather than rolling individual enchiladas, you create a layered casserole with the corn tortillas on the bottom. With the simplicity of canned ingredients, this dinner can be assembled, baked, and put on the table in 30 minutes. To serve, add your preferred toppings, such as sour cream, black olives, extra cheese and salsa. -- posted by Cookin'Diva

When I lived in California, a restaurant near Loma Linda Hospital served the BEST Vegetarian "Chicken" Enchiladas! From what I remember it had flour tortillas rather than corn. It had green chiles and a sour cream/cheese sauce. I would LOVE to have the recipe. It was so delicious. They served it every Thursday for lunch. I no longer remember the name of the restaurant.

The taste of enchiladas in a creamy, cheesy dip! I'm still not quite sure how the bf and I came up with it, but it started with a craving and ended with us dragging everything out of the pantry to try to find something to appease us! Can be made in the microwave or crockpot. Great use for leftover chicken! -- posted by AnnieLynne

Reviewed many chicken enchilada recipes claiming to be low carb recipes and found many had more carbohydrates than anticipated. Hit the jackpot when I fixed this in my kitchen! Enjoy! -- posted by mamamia1

I couldn't find a recipe that I like so I made my own. It's basically what I would use for traditional enchiladas but in stuffed pepper form. The measurements are just estimates, I usually just eyeball it so the ingredients seem equally distributed. You can choose mild or spicy ingredients depending on your tastebuds. -- posted by Chef #453756
