Heat the tortilla shells. Spread a spoon of sauce onto shell then lay about a small handful of chicken towards one side edge then about 2 tsp. onion. Sprinkle on cheddar cheese, roll into a log. Place in buttered cake pan or roaster. read more »

When I lived in California, a restaurant near Loma Linda Hospital served the BEST Vegetarian "Chicken" Enchiladas! From what I remember it had flour tortillas rather than corn. It had green chiles and a sour cream/cheese sauce. I would LOVE to have the recipe. It was so delicious. They served it every Thursday for lunch. I no longer remember the name of the restaurant. read more »

The taste of enchiladas in a creamy, cheesy dip! I'm still not quite sure how the bf and I came up with it, but it started with a craving and ended with us dragging everything out of the pantry to try to find something to appease us! I couldn't find a recipe that I like so I made my own. It's basically what I would use for traditional enchiladas but in stuffed pepper form. The measurements are just estimates, I usually just eyeball it so the ingredients seem equally distributed.
