This is my mother's original recipe -- she swears she invented this in the early 1960's and the recipe eventually caught on known as "Twice-Baked Potatoes". I believe you, Mom! Over the years she has tried adding many different ingredients, such as bacon, chives, sour cream, etcetera -- but she loves her original recipe best, and so do we. She's a stickler for only time-tested ingredients, such as Kraft Real Mayonnaise "makes them light and fluffy", Vidalia sweet white onions "any other onion will overpower them", real butter "margarine has an artificial flavor with the wrong consistency", and, sharp cheddar cheese "gives them just the right tang". She also insists on "folding-in the onion". Okay, we trust you, Mom. So, how can a recipe so basic be so good? You'll find out when they start disappearing before your eyes! Be sure to make extra for holiday gatherings -- they're always the first food to go. Made too many? No problem. They make a wonderful leftover treat for any meal, reheated in a microwave oven.
